There are a numerous amount of variations, but most of them go like this:
Team Slayer, starting weapon shotgun or pistol, second weapon energy sword. There are two teams--usually red, and one team that's green. The green team only starts out with one player, the "zombie." The zombie team can only use the energy sword, and the other team may only use human weapons. When a zombie kills you, that person becomes "infected" and changes to the green team. Thus, the numbers of the red team often dwindle down until there are only a few left making a valiant stand against an onslaught of the undead.
It's loads of fun, and there are so many different variations (do you want it to be timed? No weapon respawn? There's even a King of the Hill version) that there really is no truly uniform zombies game type.
The problem with it is that it relies heavily on house rules, and thus, you have to obey them (or get kicked).
