Simple. It is a energy field that is in such a state that all energies that interfere with it are repulsed in a slippery like movement.

Your bad breath? Not possible. Chief has a nice minty freshness to his. Bullets have an effect. They are a high velocity impact that cuase the shield to be repulsed in a certain area. Because of this movement to the energy barrier, energy is drained from maintaining the entire shielding system to countering this new threat that is attempting to make its way through. Your fists are also a high velocity impact, however you are using brute force to smack the enemy. With enough force, with a blunt object, you can cause damage to the overall shielding system. However with a brittle thing, such as a knife in this case, your object is more likely to break than it is to damage the energy barrier surrounding your opponent.
Anything a bullet can penetrate a knife can just as well. In fact, knife can get through most bulletproof vests with ease. Heck, a crossbow bolt has more penetration then an M-16 rifle, capable of lancing straight through a cinder block.
Anything? Nope. Bulletproof vests are designed to take high impact rounds, not a slower moving/ non-hyper velocity object. Meaning going through kevlar is no problem because it is not a sudden impact like a bullet. And we are talking energy, not the normal human physical stuff here. As for the crossbow. Yes it can penetrate, but I own three AR-15s(civilian M16s). They make cynder blocks turn to rubble. With just one shot. Don't try me on guns, I know too damn much.
Now, imagine the strength of the Master Chief, a guy capable of flipping a tank, channeled into a pinhead like a knife's tip. That would go through just about anything I could imagine.
Flipping a tank? That was meant for players that screwed up and made their tank become flipped over. Basically a way to correct your mistakes. The Chief in all true Bungie storyline purposes can't lift over 77 tons. Maybe 3, but not 77. Also the knife would break, as I have already stated.
More then likely, the main reason it's not included is because it would be insanely powerful. The only thing the Plasma Sword would have on it is a much greater reach/
No, it would be insanely weak, not powerful. Knife go snap real easy. As for the plasma sword...that is another lecture all together.
