Or that is atleast what the dashboard setting is. Does it change to 480p as soon as the game starts?
Hmm, you must be doing something different to me then. When I first played it on the 360, I could select 720p and the image I got would be stretched to widescreen. Then later I downloaded an emulator update, and after that the image would only have black bars down the side. I think it's unlikely they took a step backwards with the update, so possibly what happened is that originally the game had actually been running in 480p and the update added the support for 720. Not sure how your case differs from mine though.

It will stretch but you cant be using the composite cords. I wouldnt recommend stretching it to 720p though. Jaggies everywhere and it looks very distorted at times.
I'm not sure I get you. Do you mean the component, rather than composite, leads? The composite is the single yellow plug for video plus the white and red for audio. Component is the green, blue and red leads again with the audio pair on top of that. Composite can't carry HD-quality signals.
If that's the one you mean, what lead are you using when you do stretch it in 720p? The VGA?
