I have a wxga+ lcd screen on my laptop, so I can go up to 1440x900 resolution. For some reason in Halo 2 there is only 3 resolutions to choose from and all of them aren't widescreen. I can't stand playing a FPS at 1024x768 resolution when my powerhouse laptop could do much better. Has anyone ever experienced this?

No, I can go up to 1920x1200 on my desktop although my monitor is widescreen I so I dont keep it there.

Mine goes up to 1920x1200 as well, though I play on either 1920x1080 (Full Screen) or 1280x720 (Windowed) because of the aspect ratio giving a 90 degree FoV.

Here's a listing of all the modes supported:
800x600
1024x768
1152x720
1280x720
1280x960
1280x1024
1600x1200
1680x1050
1920x1080

why do I only have three options?
these are my laptop specs:
Intel Core 2 Duo T7300 (2.0GHz/800Mhz FSB/4MB cache)
2GB 667MHz Dual Channel DDR2
160GB (5400RPM) SATA HDD
256MB NVIDIA GeForce Go 8600M GT
15.4" High Resolution display (1440x900)
Windows Vista Home Premium Edition

Updating your drivers to the graphics card always helps.

And if upgrading your graphics drivers doesn't work, just play on 1280x720. That mode is superior because it allows you to see the most on-screen at any given time. There was a comparison shot of 1280x1024 (or something similar) and 1280x720 and the difference in view is ridiculous. My nVidia drivers are up-to-date, and I don't have a 1440x900 option. I have 1920x1200, which is the same aspect ratio, but 1440x900 doesn't seem to be supported.

What is says on the box isn't necessarily the best. It said 1680 x 1050, however, my radar is like 2x bigger... therefore, so is everything else...
You should choose what it looks best on. Most of the time it's your drivers, but sometimes your drivers look even worse after an update. The drivers that were autoinstalled by vista enables High Definition gaming on Counter Strike Source, when I updated drivers, it looked exactly like it did on xp... which kinda sucked... I rolledback.

Just try them all out, try out multiple drivers for quality vs resolution etc.

Forget what it says on the cover. I tried to do the same as you when I messed with the resolution on my games... Truth is, it's just bull**** too many factors can influence the change of resolution.
