The planet is no longer habitable so I guess they leave it alone.

Need what to support their religion?

The chamber of the High Prophet of Truth was decorated with shards of glass from thousands of planets they had destroyed.

From what I read Im pretty sure that the only reason for glassing the planet is to kill all inhabitants and to render the planet unlivable. I think that once a planet is glassed its dead.

I think he meant deed/ Now for glassing details (oh joy!)

How a planet is glassed.

A Covenant warship moves into a low orbit. It then goes on criss-crossing flight patterns raining down its weapons upon the surface. It does this until all water boils away, all surfaces are charred, and the atmosphere is gone. For a single ship to do this, it'll take about a week. For a bunch of ships, maybe two days. But not one speck of dirt goes uncleansed.

And yes it is glass. Super heated plasma on dirt makes glass and molten rock.

Covenant bombard a planet with heavy plasma and basically wipe out anything that would make the planet habitable, including burning down forests, burning the water bodies to vapors, things along those lines. As a result, the planet becomes barren, smooth (Glass). I actually thought originally, and still unproven, that the heat caused by the plasma literally forms the surface of the planet into a glossy, hard solid much like glass. Think of volcanoes, when they erupt, they leave Obsidian in their midst.

After a planet is destroyed I believe they just leave it, as seen with Sigma Octanus, if I'm correct.

Sigma Octanus was never glassed. We stopped that one. One of 5 space battles we actually won. (out of hundreds lost)

There is a Halo witch book? Since when was the occult involved? (Sorry I couldn't resist)

Now I doubt Halsey went to one of the glassed planets. She ran in a direction not known to the mainstream UNSC, which included every glassed planet.

Then they're just like Brainiac (forgive me if it's wrong) from DC comics. Gather information, then destroy. Or the Giant Brains from Futurama...
