I have all three, and enjoy all of them. It basically goes like this for me, Xbox has better graphics and controller, while they have some good games, they are not all games I will remember in a years time.
While PS2 has weaker graphics, but has a large selection of games, and some great series, like MGS.
Gamcube, it does not have thay many good games, but the ones they have are incredible, even if you don't like Gamecube you can't say you won't be looking forward to the new Zelda and Resident Evil.
The whole thing is, all the PS2 games that you really wanna get (GTA and MGS) are either out on Xbox, too, or coming soon to Xbox. If you mod your Xbox, you can play all the PS1 games.
I'm lookin' forward to the new Zelda game, though. Might buy a 'Cube for it. I never really cared all that much for Resident Evil.
But outside of the upcoming Zelda game and Super Smash Bros., the GC just plain ain't that great. Just like Halo is keeping the Xbox alive, so is Zelda keeping the 'Cube alive. All the super-obsessive fanboys got the latest Zelda game (which, with it's -blam!- cartoony look, raped all that was good and holy about Zelda up the @$$...just like those Philips CD-i games), along with the last Mario game, which wasn't that great. The Metriod Prime series, in my opinion, isn't much fun for two reasons: All the bad guys have a pattern, so there's no variety with your tactics when you fight 'em. Boooooooring. Also, I detest the lack of a free-look...instead they put in a -blam!--ish lock on system that takes a good chunk out of the fun in a First Person game for me. There's a certain satisfaction when you reach a zen-like state with your FPS, able to cap someone in the head from 400 yards away, your body and controller working as one. MP didn't allow that to happen for me.
Obviously, that's all just my opinion.
