Dazzle is what I use, but there are countless video bridges that are all the same.
This is my set-up for capturing video from Xbox/tv/etc:
I capture with a Mac G5, usually through imovie for simplicity reasons. I have may Xbox connected to my VCR input which connects to my TV through an RCA cable, and then I have my video bridge connected to my VCR output, which goes to digital out through Firewire, which goes to my computer, where my computer sees it as a live camera. What's cool about this is you can use it as a "webcam" for AIM, so someone can then watch you playing Halo, but for some reason iChat mirrors the image (it's flipped on the vertical axis), I don't know if AIM does this, or anything else.
