Here's a guide I put together to help players choose the look sensitivity they use to play with in Halo 3.
Look Sensitivity - What is it?
Look sensitivity is how how fast your character turns.
Does look sensitivity impact my gameplay
YES! -There are many Pros & Cons for every one of the Sensitivity levels you might use (which I will get to in a minute.)
How do I know which look sensitivity is right for me?
It really varies, Higher look sensitivity will greatly increase your reaction time and might get you a few extra kills in hot combat situations however low look sensitivity will greatly improve your aim. Try them all out in a custom game and see which one feels right. Here are some chararistics of a good level of sensitivity:
-You should be able to turn around without feeling slow.
-Your aim should be steady (meaning your recticule dosen't go past your opponent
Analasis
1 sensitivity-
CONS- Horribly slow turn-around speed, if you find yourslef in a situation where you are being shot from the back, consider your self screwed because by the time you turn around, you'll be dead.
PROS- very steady aim for sniping, if your target is going at normal player speed(100%) he should be easy to dispatch in a shot or 2. Great for begginer snipers.
2 sensitivity-
CONS- Turn around speed is still very slow.
PROS- veteran snipers who know how to actually use the sniper will find this sensitivity better than 1 because its easy to keep track of your target without your crosshair lagging behind and be able to switch out your secondary firearm at any time and still dispatch your target without difficulty. This sensitivity is great for a person who will not just rely on their sniper rifle to take out a person but will be ready to use their secondary gun to good effect. 2 is also Battle-Rifle friendly because your aim will be very firm and steady.
3 sensitivity-
CONS- Players who have played for a long time and are at the professional level may find this level a tad bit to slow in situations where you need to turn around really quick. Snipers may find it a tad bit too fast.
PROS- This sensitivity level is great for players who pay less attention to the sniper rifle but spend their time with more mainstream weapons such as the battle rifle or the assault rifle, this level of sensitivity also boasts steady aim with said manstream weapons. In other words, it's good for the non-Specialist player who is ready to use whatever weapon he/she may find.
4 sensitivity-
CONS- Less experienced players who raise their sensitivity from 3 to 4 simply because they wanted a change will find that their efficiency on the battle field will change a lot (in a bad way) Using this sensitivity is more of a gamble than a good choice as you may miss a few vital shots in a BR duel that may result in a loss (This applies to players who are new to 4.)
PROS- This sensitivity level is good for players who tend to avoid weapons that require extreme aim and concentration (such as the battle rifle or the carbine.) The turn around speed is balanced for people who can handle it. It should only be used by veterans. Good for competitive sniping!
5 sensitivity-
CONS- Turn around speed takes some time to get adjusted to, it's a pretty big change of speed from 4 - 5.
PROS- Good for experianced snipers, 5 sensitivity offers a slight advantage for those who like to dispatch multiple foes from the same clip due to the fact that you can move your cursor more smoothly and less slowly.

6 -10 sensitivity
These levels are really for players who don't slip up in BR duels and can keep their reticule steady, the pros and cons really dont change much, all that changes is the speed, These levels are for players who have played Halo 3 for 5-10 months I'd say. These levels are good for players who like to try to dispatch multiple targets without waiting to recharge their sheilds after damage. Do not switch use 6-10 until 1-5 starts to feel too slow for you and starts to impact your gameplay negatively.

Keep in mind that a higher look sensitivity is not necessarily better!
Keep your sensitivity at the level that feels right for you, there is no "good" or "bad" sensitivity levels, all of them have various pros and cons.
