what is the difference between the included component hd cable and the sold seprately hdmi cable?

The component cable is analog whereas HDMI is digital. HDMI also combines the digital video and full surround sound into a single cable instead of 3 cables for video and another 2 for audio that you get with component. If your TV supports it then I'd go for HDMI considering you can get an HDMI cable dirt cheap if you know where to look for one. It can go for as low as $2 or cheaper.

so i can use any hdmi cable? i dont have to use the xbox one, because the the xbox ones looks diffent from the regular hdmi cables

They're the same thing except the Xbox HDMI cable comes with an Optical/RCA Audio adapter for non-HDMI supported stereo systems. If you're just going to use the built in TV speakers rather than a analog stereo system then I don't see the need for paying $50 for the Xbox brand.
