Why the hell would I want to open my Xbox and change a Disc when I wanted to play Multiplayer after playing Campaign(or vise versa)? Better yet, why would You?

i don't i am just stating a possiblilty because one disc might not be able to hold all the information of the game and the multiplayer!

This is Microsoft we're talking about here, man I'm assuming a disc they made would be able to hold all the data. I REALLY doubt they would do a two disc set.
The LE version has a DVD that includes in the making videos, original teaser trailers for both Halo games, etc. No two disc set unless Microsoft downgraded themselves recently.

Xbox game disks are Dual layered, capable of 9.7 Gigabytes of data storage. Halo was 4.5 Gigabytes. I assume that with the MP content, and stuff itll get to around 7 Gigs.

Games are so big because they are usually stored uncompressed so itll fly to the Hardrive a helluva lot faster.

It won't be 2 discs because an xbox uses DVDs and they can hold something like 4.7 gigabytes. I don't think even halo 2 could be that big.
