Its usually bettter (for me anyway) not to aim with the right thumbstick, but to aim with the left (movement) thumbstick, because you can easily over aim and miss someone by moving the looking thumbstick too far, but if you're body moves with your target, you'll be that much sharper.
I do the same thing, it makes it about 150% easier to nab that head shot.
Also, no matter how many times you miss or how many times you get beat, never stop trying. A good level to practice sniping is Boarding Action, the level on Halo that I don't think should exist. This is it's only use.
