Easiest way to do it I've found is use a (wireless) router, something along the lines of a Linksys device--the wireless part doesn't matter really, just the ports in the back for plugging in cables--there are 4 so you can hook up (the maximum allowed number of) 4 Xboxs. You need of course an equal number of ethernet cables as you have xboxs (2 in your case).
If you don't have a router, linksys or otherwise, you can get them for about 30 bucks, give or take, at a best buy, office depot, cicuit city, etc. It's blue with 2 black antennas. You just plug it in, connect your ethernet cables to the router and xboxs, and link away.
There IS a way to hook up 2 xboxs with two cables connected together end to end, but even if you get it to work, the non-hosting machine will be lagged and the game will drop after a certain amount of time. Basically what I'm saying is even if you could get the wire-only thing to work, it wouldn't be fun.
