Well, it seems I've managed to change your mind on the human vehicles.
The Ghost from the example you saw was sitting still. If it was used properly that would be a different story. The new Ghost can move at about 60MPH, more if boosted. Your tactics should be, simply, not to get hit. You should be making multiple sorties at full speed, softening your targets, distracting them and pestering them until more powerful vehicles or infantry arrive to deal with things.
If you're a shotgun, close range, specialist the Ghost is the answer to what you've always wanted. Go flying at your enemies, full boost at about 100MPH. You break into their lines, disembark and start causing havoc while your allies advance.
If you're the type who used the Ghost in Halo1 to coast up infront of your enemies and stand and shoot (and most Ghost lovers do this incessantly) then you deserve to go down. The Ghost will blow up underneath you, you'll probably live though your shields will be down and you'll have to take cover against the secondary explosion. Now, if you used your Ghosts properly, took a few strafing passes at him before standing stock still in front of him you'd kill him easily.
It's all about in how you use what you've got. That's realism. The soliders in World War 2 didn't use motorcycles (what the ghost really is) for full battles. They used them to harass infantry from and lend chase to other vehicles.
