You're forgetting that like Blood Gultch, Midship was a very popular map in Halo 2.
Anyways, Blood Gultch would not work so well for Halo 3. Why? Spawning would be absoluetly horrendous. Standoff is a prime example. That has more cover than BG, doesn't even have a Sniper, or the Tanks present in BG, and that map has some bad spawns. BG's spawning would be much worse.
PLUS, there's already a couple of maps in Halo 3 that are too similar that by adding a BG remake would be redundant. Valhalla, Standoff, and (in a way) Defualt Sandbox are very similar to BG.
Now, I have no experience with how Coagulation played on Xbox Live in Halo 2, but the map's openness is suggesting to me that spawning must've been bad on the map.
I'd like to note that BG was my favourite map from Halo: CE, so don't think that I'm a BG basher.

Blood Gulch would be terrible for Halo 3 because it's simply too big. All of the weapons in H3 are suited towards short range combat. The Battle Rifle has nowhere near the range of the old Pistol and even the Sniper Rifle has a shorter effective range. Standoff is a map that tries to capture the essence of Blood Gulch in many ways but it was designed in a way that suits the gameplay of Halo 3... Closer combat. And Valhalla is yet another spiritual successor that's geared more to a higher player count.
Midship was probably chosen because Halo 3 is sorely lacking in small, FFA arena maps. The Pit was the only "small arena" map when the game launched. Since then we've only had Assembly.
Even if Blood Gulch could work in Halo 3, it's not just about popularity. It's about offering a well-rounded range of maps for the game. The game launched with pretty much medium-sized maps across the board and so far they've given us 2 BTB maps, 2 Forge maps, 2 medium sized maps, and 1 small-ish map (Assembly). It makes sense to have Midship in the next batch.
