For a realistic difficulty, it will depend on who/what we play as. If we play as Spartans, it'll depend on whether or not we play in the suits that have shielding or not. If we do have shields, how much they hold up against will be really up to Bungie, as the books are never really consistent on how much damage a shield can take before failing. The Flood has Chief's shields being drained completely from one or two hits from a plasma rifle, whereas others have the shields taking a fair amount of damage.
A good area to put the shields would be 7-8, maybe even up to 10 hits from a plasma rifle. This may sound like a lot to some hardcore players out there, but you have to remember that you rarely face just a single, plasma-weapon-wielding enemy.
Also it would come down to how much work they put onto hit registration, mainly whether or not a shot hits the armor or the kevlar-ish underlayer. The armor itself (MJOLNIR, not SPI) can take a beating from plasma, it's the underlayer that can't stand up to it. On the upside, a realistic setting would make the Chief and pretty much any Spartan-II nigh impervious to human small-arms.
