And really? A POCKET knife? You couldn't kill a 12 year-old in one stab with a pocket knife.
Anyway, the strike from a gun inflicts more damage than a stab from a combat knife. The reason for it in Call of Duty is because you're not exactly supposed to whack your gun into stuff, and it's quick to draw and attack with. The Halo guns are built tougher, so you can whack 'em all about..
Also, how do you know the Covenant aren't very tough-skinned?
EDIT: Plus, by using the gun for melees, you can change the strength and speed of certain melees, which adds a new dynamic to the gameplay
