I like Halo's graphics; too many games are hung up on being "realistic" by making everything as brown as possible, but Halo 3 is bright and vivid, making it is easy to tell where things are and what's going on. It's just a generally well constructed game when it comes to the graphics and sound being a part of the game-play, rather than a murky brown window into a game you can hardly play because you have no idea what's going on.
I can only hope that ODST is more of the same, with some new game-play stuff, and multiplayer refinements.
