The funnest enemy to kill depends on the conditions. If the grunt B-day skull is on, it's, of course, the grunts, but if it's turned off, the marines. It's funny to headshot them with a Magnum and then they start turning on you. Then you could just destroy their whole squad with a plasma or spiker grenade, as they run towards their other marine comrades.
The most challenging enemy is compromsied between the brutes and the elites. It depends on the class and their abilities. The honor guard elites kind of sucked, while the honor guard brutes were a a lot tougher. The ultra elites were a lot stronger and strategic, while the brute captains only had a Brute Shot and could be dispatched with ease. The brute chieftains are tough in Halo 3, compared to the zealot elites in Halo 2. It's a whole big debate for me on who's more well erquipt for combat.

Elite Cons:
Not Fat, so They Absorb Less Damage
Not as Agile as Brutes
Don't Attack as Fast as Brutes
Sometimes Make Really Retarded Noises When They Die
