Oh you mean take the visor off. Maybe we dont know to mutch on the customization so far but we might be able to seeing how we can take off helmits

It is confirmed, you guys need to watch the E3/ Comic-Con gameplay footage. But they have not shown if you can change the polarization (spelling?) yet.

Bungie confirmed armor premutations (spelling?) in a weekly update, I think.

Just a little thought onto question 1, if you look at THIS screenshot, they are all clearly The Rookie, but you can see one has a dark black stripe down his helmet, one has no backpack and another has what seems to be a Bandoleer around his leg.

I saw Buck with different chet-plates in some videos of the Comic-Con.
I'm pretty sure that you can sneak a peek of it in one of the recent videos. Maybe it was last Friday's post.

The one with the bandoleer is Mickey, you can see this from the bandoleer and the small light on his helmet. But I'm pretty sure the rest are the Rookie. Nice observation.
