I AGREE.
It would be nice if it could fit on the game disk so you could watch all of the cinematics from Halo Wars, Halo Reach, Halo 1, Halo 2/Halo 3: ODST (mixed depending on what time they take place), and Halo 3, from start to finish, in chronological order of when they happened in the Halo timeline.

Cinema -- click this and you get to select which cutscene you want to watch, and you could set it to play through them all after the one you select.
Bestiarum -- a 3d interactive view of all species in Halo REACH (possibly with no armor on), you can rotate around them in all directions. Sub-options include going through and viewing all ranks of them, with their unique armors and a brief description of what they are like. Unlock more ranks for viewing by killing one in campaign. You can click buttons to make them do certain things (i.e. A makes them jump, B makes them melee, Left Thumbstick makes them crouch, Right Thumbstick may give them a taunt [Grunt dance?], etc.)
Armoury -- shows us a 3d view of all weapons which appear in Halo REACH, as well as a brief description. You can click buttons to make it shoot (i.e. pull R trigger and it fires).
Motor Pool -- like the armoury, only you view vehicles.

All this + developer Commentary on all Halo game cutscenes, as someone else mentioned. Maybe some little interviews on the Voice actors of the characters, to give their take on the character they play (included in the 'Making Of' documentary). I'd also love to see some mini documentary's on each Covenant species, showing their homeworld (using in-game engine).
In terms of a physical item that comes with the game - I'd like a miniature model of the squad (of Spartans?) that you play with during the game, you know striking some cool poses (like the banner)
Whoever mentioned the Reach-branded 360... ME TOO!! (150GB HDD, with a redish, golden paintjob similar to the style of the Reach banner, with a matching pad of course: Pack it in with Natal and I'd buy it)
