if an ODST can detatch a turret then why cant he dual wield?

Ripping off turrets is probably exsclusive to Firefight.

Remember, we've only seen it happen in Firefight, which is non-canon, so it may not appear in the actuall campaign.

Because Turrets are speciffically design so that if the ODST un-does a small latch, the Turret will rip off.
That make's sense, right?

Whereas Duel-Wielding = LOTS of recoil.

The turret still weighs a few hundred pounds, on top of the few hundred pounds of recoil.

For all of the 'Recoil' theories, you are very wrong. A modern day minigun weighs a few hundred pounds, and has about 400 lbs pushing back at you through recoil. SMG's would be much less than that.
