The rating hasn't been officially announced yet, so anything is possible in Halo: Reach. Anything.
If the game is rated the usual M, then we won't be expecting much blood or gore, obviously. But what if Reach is rated MA 15+? Then there's an opportunity for some real *Honk*.
Some real *Honk* I would like to see in Reach, if it's rated the latter, is definately some stuff featured in the original Halo 3 ViDoc, Et, Tu Brute?

When I saw the gorey features in that video for the first time, such as the Brute ripping the marines arms off, and the Elite slashing both of a Brute's lower legs off with twin Energy Swords, finishing him with a stab in the stomach, I was literally wowed. I was a little disappointed when we didn't see those scenes in Halo 3 itself, but it didn't turn me off of the game too much, luckily.
I loved the bloody scenes from Halo: Combat Evolved, and I would like to see Halo return to its original roots. We didn't even have scenes like this in Halo: CE, but the stuff shown in Et, Tu Brute? just looked plain awesome. It's sad that they cut it out.
I don't know about you, but I'm in for this.
