I'm having trouble killing those huge alien dudes in Tayari Plaza. I mis-posted in Halo 3 forum and someone there said "attack from the back." What exactly did he mean by that?

These huge guys are called hunters. In halo 1, a simple shot to the back with a pistol or sniper rifle would put them down, and their melee wouldn't kill you in one hit. Also, they only had one melee move and their cannons operated differently, firing a projectile rather than a beam. In Halo 2, Halo 3, and ODST, however, they are another deal entirely. No weapons will kill them in one shot to the back. By attacking the back, we mean shoot the exposed orange flesh. Sniper weapons and carbines/BR's work very well for this. Explosives are the most commonly used ordnance used against these beasts. Grenades work well, however firebomb grenades have little or no affect, but a flaming hunter sure does look cool. Spike grenades (the brute stickeys) are extremely effective, usually taking only 2 or 3 sticks. Normal stickeys work well also, but don't do as much damage to hunters. Frag grenades do a decent amount of damage, I recommend throwing these if the two hunters are close together. The rocket launcher and fuel rod gun are extremely effective against hunters. No need to deal with the aim for the back business, just aim and nuke. The hammer does inflict some damage, but use against hunters at your own risk. Also, it is possible to dodge around a hunter when he melees, shooting at the back whenever you get the chance. In addition, hunters are extremely prone to high-velocity splatters. The warthog, chopper, and ghost are all quite effective. When it comes to the chopper and ghost, be sure to boost before impact. Lasering a hunter is also effective, being a 1 hit kill, but I recommend trying to line up the two hunters, in order to save precious laser ammo. If you're in a pinch, a brute shot can inflict damage.

TL;DR version: Explosives, shots to the back with precise weapons, splatters, and the laser are all effective against hunters.

On Tayari Plaza, you don't have to kill the hunters, even on legendary. You can just run away (just not in a straight line) and the doors will close behind you, preventing the hunters from following you.

You could but that would be taking the Path of Shame by just running away to get to the end of the level. Killing them, along with all the other enimes, would be taking th Path of Valor. These are common paths you can take in certain circumstances on select levels in Halo CE, 2, 3, and ODST. I highly suggest taking the Path of Valor.
