Besides the Banshee, what flying vehicles have been revealed. I know the Phantom has been shown, but is it an attack ship, a troop transport, or a mix. I also remember the word Shade or Shadow being mentioned in conjunction with flying vehicles. Can anyone post a link for it as well?

The Shade is the Covenant turret from Halo: Combat Evolved, and the Shadow is the Covenent version of a Warthog.

Creep
The Creep is the all terrain bus of the Covenant, allowing for quick deployment of troop masses across the battlefield. It's armed with a heavy plasma turret on the top, and has an open bed for transporting large objects/troops. If you see one of these on the battlefield, assume that Covenant reinforcements are nearby. http://haloplanet.com/halo2/game/vehicles/creep.gif

Seraph
The Seraph is the Covenant's main space attack fighter. It is somewhat tear-drop shaped, and is about 3 times the size and mass of the Banshee attack craft. It is armed with plasma cannons, and guided plasma torpedoes. No picture released.

Phantom
The Covenant Phantom is a much more formidable dropship than the Apparition. It boasts several plasma gun turrets, and can literally drop its occupants to the ground without having to fully land.

Shadow
The Shadow is a ground attack vehicle used for patrols and engagements. The Shadow has a plasma turret mounted on the rear, and has room on the sides for two soldiers to ride along for increased anti-infantry capacity. It maneuvers more slowely than it's lighter counterpart, the Ghost, but it still uses anti-grav pods to hover and strafe, allowing for a smooth ride over uneven terrain.

If by flying vehicle, does that include hovering vehilces?

Anyway, the only two pilotable flying vehicles will be the Banshee, and the human flying vehicle. [proof] In an interview with one of the Bungie employees, the question "Will there be a human flying vehicle?" and Bungie replied "No comment." All the other questions that were answered said "No" or "Yes" and was explained thoroughly.[/proof] There is about a 75-85% chance of there being a human flying vehicle.

In my mind, I always thought it would be alot of fun to fly the Phantoms to the cruiser after the MC takes out those elites at the end of the e3 demo.

They do. There is a picture of a fan-made one here. It was designed from the descrition from Bungie, and this is what they got. I think iit's pretty sweet.
