It's hard to say really. We don't really know anything other than what the San 'Shyuum told us. We never really had an "economy". We never understood why things such as gold and metals were considered of worth in societies that we came across all those eons of scouring the galaxy. Why value metals over life and honor? Us Sangheili have never truly had a currency system, and I doubt that we will in the future.
I would theorize that our people will most likely be structured somewhat similarly to the old Covenant, a council of representatives acting on behalf of the people, but this time to better the Sangheili as a whole. However, I doubt we will ever have any sort of currency similar to the Humans or Kig-Yar (both of which highly value gold, for reasons we don't understand). We would simply each have a role in society, working together to better ourselves and our Sangheili brethren.
As for expanding technology goes, I also don't see much of that happening either. The Covenant were not innovative, but instead imitative. We modeled our weaponry and starships after what the Forerunner left behind. The only way I could see us Sangheili developing further is if we find more Forerunner artifacts, If at all, the only way we'll be advancing further, is by perfectly modeling Forerunner technology. While it is advanced, it is, again, imitative, not innovative.
