So, obviously, the Covenant's main target was New Mombasa- seeking the Ark's portal. They were also in Afghanistan, Cuba, and Cleavland, Ohio. (which I am guessing, they must have explored a little more across the east of the North American Republic and other parts of Africa, and the Caribbean)

But were there any other major battle grounds? Did they wrap around the globe?

Given the death tolls, they were basically everywhere. Once Truth arrived on the planet they began to coalesce around Eastern Africa.

Australia also got hit, very hard apparently due to the concentration of key facilities such as the Hive, according to the Halo Encyclopaedia.

As for your question, I would say that they did have coverage around the globe. The Encyclopaedia states that Earth had a population in the billions. Then after Regret showed up, the population was cut in half in a matter of hours. By the end of the war, there are only 200 million Humans left alive, which are spread out over, at the most, a dozen colonies, leading one to believe that there are obviously even fewer people on Earth. It is very likely that every major city on Earth is rubble. Also, Commander Keys commented on the fact that the remnants of the orbital defence grid were smashed by Truth's invading fleet, so they were at least able to establish a global presence. To be honest, it would not really have mattered if Earth was glassed or not now that I think of it, the result would have been the same. Billions dead and global infrastructure and order smashed.

He committed most forces to Kenya to dig for the Ark, but Australia was destroyed completely. Judging by the population of humanity after the war (200 million) I'd say they were everywhere. In fact, by that population, most Earth cities were probably decimated.

Judging by the map on the tv screen in Halo 3's Crow's Nest, (having trouble finding a picture), we can see where most of Truth's fleet was.

New York, Cleveland, Los Angeles, Mexico City, London, Berlin, Santiago (Chile), and two cities over Africa sorry don't know those :/

I always thought that truths fleet of 30 ships seemed a litt e small, but then I considered that the battle for earth was over a month long and they had to fight the humans for the entire time, and they had to spread out across the globe, and not every single ship was probably able to make it to the ark to enter the portal (some probably were still fighting in space or at other places around the globe). Then I guess truths fleet could be estimated in the 100s, rather than the 30s.

The radio on Crow's Nest says that "all Brute cruisers are falling back to truth's ship". And remember that the 30 ships were what remained of the fleet after the battle. The original fleets had to face 298 Orbital MAC's, so they were obviously a much larger force.

Most population centres, as well, the flood came and a chunk of Africa had to be glassed as a result, so not all casulities were created by the covenant
