I am a monument to all your sins

its difinatly less than that towards the end of the war, but I dont know the exact numbers
edit: based on the datapads the unsc did have about 2000 ships, but like I said those numbers had dropped significantly by the end of the war

Reach had 152 ships and 20 Orbital Defense platforms, Earth itself had at least 1,000 ships, considering it had 300 Orbital Defense platforms. The UNSC had about 800 colonies, so I'd guess the total numbers would be around:

Warships: 4900 ( Im kinda guessing off of Bungie's favorite number and what I think. )
Total ships: 7000-10000 ( Commercial craft, and warships. )

The UNSC probably had many more ships than the Covenant, however the Covenant usually had the much better tech in space.

UNSC- Quantity
Covenant- Quality

The numbers after the war were probably taken off by 1/3, however I'm sure the UNSC gained much insight into covenant space technology as well.

Thats just my opinion based on the books and games, as well as any other canon relating to space warfare that I've seen.

"Find where the liar hides, so that I may place my boot between his gums!" - Rtas 'Vadum

2000. Not 100% sure if that is total space faring vessels or just warships. Given the context of Data Pad 10 I would say warships.

From another thread:
From Data Pad 10, the number of UNSC ships can be worked out.

The Earth is 126 billion acres.

If 15 seconds for one acre, then 60'000 years for the whole Earth. That is for one ship.

"Assuming that the Covenant has an equal number of ships to Humanity, then using all of their ships on one planet would take them 30 years" - Paraphrasing Data Pad 10.

So in doing it in 30 years they must have 2000 roughly, which was stated as being equal to the UNSC's numbers as a point of reference. That was in 2526 as well; just after the beginning of the war.

Actually i believe the covenant had more ships its just they didnt send as much. In the halo books the covenant have hundreds of ships that are going to head towards earth and lets just say a certain someone didnt let them. I some battles the UNSC did have alot mroe but took heavy losses as you said like sigma octanus i think and harvest.

Perhaps, however, most of those ships are from High charity. The Covenant would have to leave their city defenseless to use their fleets full might, which is something any commander should never do. Through out the war, The Covenant Navy took huge losses, as they were almost always on the offensive. This gave the UNSC the advantage of only having to produce ships and platforms for defensive capabilities, instead of sending them out on offensives.

The Covenant however had the huge tech boost, which is why in most battles, the UNSC outnumbers the Covenant 3 to 1, and takes many losses to win as you pointed out. Some battles included:
Harvest
Sigma Octanus
Earth
Ariel

I'm sure many others as well.

This. The datapads support ~2000 ships around the start of the war. However, as anton1792 noted, that number may only be warships or ships above a certain size/class.

Wake me when the jews are gone.

obvius it only count UNSC warships because they can't no how many the rebels have and the haloverse could have an Ultor/Umbrela like corporation or a Cerberus
