I know I'm late to the stage. I've been on and off reading through Contact Harvest and just recently passed the first civil contact between the Brutes and Humans.
I may have just missed the point, but I think that the initial fight was too pre-emptive.
What actually happened?

Brutes Land > Johnson unloads and hands away weapons > Brutes do the same > They go to the dining hall > Man shows Brutes intro to Harvest while Mack reads body language > Brutes show etching of them asking humans to hand over Harvest > Gunshots > Fighting.

It seems a bit too forced.
Yes, there was tension between them. But surely they would've tried to make a deal before fighting?
Was it a slip up on the Brute's behalf? I thought Tartarus and Maccabeus decided to be civil first and foremost?

By the power of truth, I, while living, have conquered the universe.

The Jiralhanae were only interested in obtaining the Forerunner relics (little knowing that it was humanity the Luminaries were showing), I've not read CH since the summer so my memory may be a bit rusty but I don't remember this: Brutes show etching of them asking humans to hand over Reach

I think Maccabeus wanted peace at first, it was the prophet's fault.

Sorry, too much time in the Reach forum and things to do with Reach all together. I know they didn't know about Reach at this point.
When the humans were arranging to meet the covenant, they left "etchings" at the kig-yar ship, to show that they wanted to trade.
At the first contact, the Brutes did something similar, showing that they wanted the humans to hand over the planet.
Or am I totally misinterpreting this?

But prior to the meeting, the Jiralhanae hadn't contacted the Prophets?
They were just after the relics to take back?

As the person above said, the failed meeting was just someone who got trigger happy, the war however was started because of the prophets.

On hiding dead bodies:

Inside another dead body. It's the last place they'll look
A corpse within a corpse.
CORPSEPTION.
Win.

A grunt panicked and disembowelled a marine who was moving between the hidden and opened groups of marines. Fired his rifle on reflex, the Brutes panicked and killed Rol, for being closest to Maccabeus.

Marines fired back, Human Covenant War begins.

It was actually Johnson's fault for sending Osmo to the 2nd squad on overwatch for yawning. Although I think the Brutes would have still become hostile from sheer boredom.

Their interests in the equation didn't match. The humans were screwed from the start.

Well, yes, and no. You are assuming that the reason the war happened is because of the Brutes. Because of that first contact scenario and how some Grunt got hostile, or some militiamen fired early.

That isn't it at all. When the Prophets realized what the Humans are, they declared them a heresy and a affront to the Covenant. They declared that the Human race must be destroyed, to make sure nothing got in the way of their power. To protect the secret that Humans were the chosen ones by the Forerunner to reclaim their legacy.

Even before that, the Brutes were already a bit hostile because to them, it looked like Humans were hoarding artifacts. Their Luminary showed that each and every human was holding an artifact, when in truth each and every one of them WAS an artifact. So to speak.
As someone else said, Maccabeus was trying to work out peace and figure out why the Prophets wanted the Humans dead. But when Tartarus killed him and took over, well, that chance went right out the window. Even so, Maccabeus would not have turned his back on the Covenant or disobeyed the Prophets. If the Prophets wanted the Humans dead, Maccabeus would have done their bidding eventually, regardless of what doubts he or anyone else had.
