Yes, I am well aware that Covenant ships are faster, but how did they know when the Pillar of Autumn was going to return back to normal space?

When you tail someone you can predict where theyre going by the path they chose (or direction). Its call inductive reasoning ( i think)

Let's be honest, it could be a lot worse.

Well think of it this way; since the covenant and UNSC got to the ring at the same time and UNSC sent life boats out first it really doesn't make sence, but how much would the game suck if you did nothing while waiting on the ring.

The Covenant would have worked out the coordinates of Halo the same way Cortana did. Remember that the PoA's seemingly "random jump" was actually a plotted course from Cortana. As the Covenant Fleet were pursuing the Autumnthey would have realised that their trajectory would lead them on an intercept course with one of the coordinates they had discerned from the rock on Cote d'Azure. So, yes they were following the Autumn initially, before realising where they would be and then bet them to it. At least that's how I would reason it.

"At lightspeed [Cortana's] maneuvering options were limited" seems to strongly imply that UNSC ships cannot simply "drop" out of slipspace whenever they please like Covenant ships could. They just punch holes and pressumably exits into slipspace and as a result the Covenant would likely be able to figure out where the Autumn's intended destination was long before the Autumn could reach it.
