Given how much Elites respect fighting skill, dying with honor and overall bravery, you could conclude they hold Spartans in high regard. You would think that, but they call them demons. Even after the Great Schism, they still called Master Chief "demon". Not only that, but he's even referred to as The Demon.

I heard someone say once (paraphrasing here) "Multiflag on Blood Gulch with your friends is what makes Halo, Halo." I GUARANTEE that more people agree with that sentiment than "Getting a 50 in MLG is what makes Halo, Halo." - Oboewan42

I'd wager that most Elites didn't actually know the truth about the "Halo's annihilate all life" ordeal, just that the Covenant decided to turn and kill off the Elites and so focused on the fact humans would be valuable allies and that their leaders had allied with them.

After the war was over, I'm sure Rtas and Thel explained the truth.

Even if the Spartans were seen by the Elites as demonic spirits right up to the end of the war, you'd still think they wouldn't revile them so much because of said martial prowess.

-blam!- Was that actually blammed out? Or did I just type it? You'll never know.

It's mentioned in a few Halo books how they somewhat respect humans and admire their fighting ability and courage.

Well if you saw a human that was an elites size covered in metal to where you could not see its face and had just killed about 50 of your soldiers, friends, and even your taco man Wouldn't you call him a demon to?

If I remember correctly from Cole Protocol, it was the whole helmet thing that gave them that nickname. I'm likely totally wrong though.

They call the Chief a Demon out of respect when he is their ally.

But even up to that point, even though the Elites hated and systematically annialated the humans, they still respected them and the Spartans for their prowess, especially with their inferior weaponry.

"The thousand man slayer" and its derivatives are common staples of fiction. That doesn't mean the tms's rivals don't respect him for his abilities - just that he's slayed a thosand men and you should know it.

Likewise, if one Spartan killed off a hundred Elites solo on a certain ringworld, the survivors would consider them forces of freakin nature.

The Elites hold humans in general in high regard. They asked to invite them into the covenant as well, but were completely shot down by the prophets when they found out that the humans could use forerunner tech and they couldnt.

I never thought to look at it that way. It's not so much an insult as it is a recognition of his legend.
