You might know this, you might not, but Odd One Out was completely non-canon, so there really didn't need to be any plausible explanation for anything that happened in that episode. It was just a crazy "let's do something fun" kind of thing.
The Duel was non-canon as well.
HERP DERP MARRIED SANGHEILI SWORDSMAN + SAURIANS WITH BOOBS FIGHTING 40-FOOT TALL MECHA GUNDAM HUNTERS IN FEUDAL JAPAN HERP DERRRRRP.
Um...NO :P Odd One Out was the only story that was non-canon in Halo Legends. When asked about the size of the Hunters Frankie said they can get that big, because the size of the Hunter depends on the gravity, atmosphere, and environment of the planet. And the Hunter didn't look anything like a Gundam, the Prototype suit kinda did, but not the Hunter.
The Elites were compared to Feudal Japan way before that episode of Halo Legends. Why is it a surprise that Japanese animators would expound on and heighten the similarities to their own culture when they saw it? Americans do the same when transferring a foreign series over here to America because it appeals more to the national culture than something completely foreign would. Like when Super Sentai (or whatever it was called in Japan) made it over here it became Power Rangers, and I can bet you that Power Rangers is very different from Super Sentai, especially culturally.
We've never seen a female Sangheili, that might indeed be what they look like, we don't know, but I don't think that Han's appearance is entirely accurate. 'Cause while all the stories are completely canon, not all the appearances and such in the series are, it's called Artistic License, pal!
