Maryland crab cakes.


1 pound jumbo lump crab meat.

4 medium slices of white bread, crust removed, processed into crumbs.

roughly a quarter cup of chopped herbs, maybe more, maybe less, use your judgement, and it's O.K. to taste it before cooking, as the lump meat is pre-cooked
herbs as follows, equal portions of finely chopped Chives, Parsley, and Scallions.

2 tablespoons of melted butter (add 1 tablespoon lemon juice) and 2 tablespoons of mayonaise, emulsified by slowly adding the butter/lemon to the mayo while vigorously stirring.

salt and pepper



cayenne pepper to taste.

Youll also need about 2 cups dried breadcrumbs, 2 eggs, and 2 cups flour in seperate bowls. Do this when you're done making the cakes.

Take the lump crab meat out of the container and break the large pieces into medium sized chunks. MAKE SURE to check every piece of crab meat for pieces of shell, you WILL find very small fragmments of shell, which are not very pleasurable to eat.

mix the crabmeat w/ the breadcrumbs and butter/mayo. if the mixture is too dry, add mayo a little at a time until the mixture is wet enough to form it into shapes, like dough. but not too mayo'd out.

add the herbs, salt, pepper and cayenne while tasting to perfect flavor.

Use large spoons to form the mixture into roughly 2 ounce portions, and place those on a cookie sheet, and freeze them.

once hard and frozen (makes this process easy) coat with flour ffirst, than dip into the beaten eggs, and then into the breadcrumbs so that they are coated. for an interesting twist, use japanese Panko (used in tempura) instead of breadcrumbs.

When all ready, and no longer frozen, deep fry until golden brown and serve w/ lemon and tartar sauce.

if you do not have a deep fryer, you can sautee in a pan with butter or canola oil, OR, if you have a candy/fat thermometer you can use a stockpot or similar large vessel, fill with oil, and keep at exactly 375 degrees using the thermometer.
