Halo does has depth, and it will surely get more expansive as time goes on. The problem is fragmentation, passing Halo from author to author it becomes broken and inconsistent (see the Star Wars EU).
But to say its unmatched is a bit naiive. Star Wars and Star Trek are the easy ones that more than match Halo for depth, but then these shows are old, really old. Star Trek is coming up to 50 years old.
In the video game genre Halo is way up there, perhaps only bested by Fallout though I'm sure there are some other series that are impressively expansive. Fallout is the only other video game universe that has grabbed my interest to the same extent as Halo.
I do see your point when it comes to the 'fragmentation' of Halo's story, however I feel that it is a good thing to change the author of a collection of books (let's say the foreunner series should remain Greg Bear's and his alone), and that each series should have a different author, to add variety and flavor to the plot.
Sometimes its good for the story because you don't always read about Spartans killing the covenant and you get a more human element. On another note, some authors tend to get more canonical information into their books than others, but I wouldn't want that alone.
