If you really want to read into this sort of thing, just look at the matte-black gel layer you can see at flex points on the armor. A spartan could use that as a cushion against the recoil, even though his brute strength would be able to pretty much absorb the recoil as it is.

Regardless, the Spartans trained without their armor for years. Could just be habit. And the weapons are designed to be held against the shoulder. Firing from the hip would slow reloading, could block ejection ports, and may make a larger profile.
Beyond that, it is easy to mentally visualize where you are aiming without having to check your sights if the weapon is shoulder-mounted. If a Spartan couldn't shoot a target without the use of a smart-linked scope, would you call them super soldiers?
