Well if you're applying for the Concept Artist position, you're going to need to have 2D concept art pieces to show off. I'm not sure that Bungie really hires sculptors; they have modellers, but they work in a 3D software package most often, not in a physical medium. If that's your forte look into getting serious with Maya or 3D Max.
As for number of pieces, Quality > quantity. Show them your best, most polished pieces of work. Lets say, more than 5, less than a dozen. You need to wow them, not bore them by making them page through hundreds of pieces. Also pick pieces that show the width and breadth of your talent. Including interior, exterior, natural and artificial, character concepts, vehicles, weapons etc. As broad as your talent is, aim to show it in your portfolio. But if you honestly can't do weapon concepts (for example), don't throw in a crappy one: just the stuff that someone would pay you for.
So yeah, flesh out your portfolio to show that you could do the job you're actually applying for.
