Whenever they actually mention it, it seems mostly similar to our definition of honour.
Some people like to believe that there is a significant difference between Sangheili beliefs in the word. Although until we actually see some cultural difference within their race over this semantic issue then I doubt it. It is all very well to rag on Humans for their "lack of honour" but we have never, ever seen Sangheili rag on each other over differing views on the subject.
It may share some traits with our definition but the Sangheili are quite backwards in their ways, and their standards may be very different from ours. So therefore being considered a good person in each culture may vary greatly.
Or it may be somewhat similar (Or not necessarily) and it is just that Sangheili are as practical as any other soldier on the battlefield; their moral codes go out the window. The Samurai were like that I believe. Off the battlefield it was all poetry and honour; On the battlefield all that mattered was killing the enemy. Honour could be a staple of their civilization that few totally adhere to 100% of the time.

Also, they wanted to leave the humans on earth to the Flood and just glass the entire planet, and they can't use the religion they just abandoned to cover their arses for that.
The reason why they were going to glass the whole thing was because all it takes for the Flood to survive and start again is a single Flood spore. In order to make sure it is all eradicated, glassing the whole thing would be required.
There is no indication that they wanted to leave Humanity on Earth to the Flood. They wanted the Flood gone as fast as possible, so letting the Flood get to Humanity would be counter-productive. As for glassing over the top of Humanity, it is a possibility. They may have helped evac, or they might not have.
