When I grow up, I want to be just like goofenhour.
Pretty much anything that has to do with console development (minus all the sound and Marty work) all has to be done through a PC. All the content that they create has to be pushed to their XBOX Development Kits and PS3 Tools, which can only be done through PCs.
But it is possible to use a Mac in development. Only problem is that when they create it on a Mac, they would eventually have to transfer all their content to the PC regardless if they want to put their stuff on a build. Boot camp isn't really an option, because unless they were using a Mac Pro, compiling and syncing their XBOXs and PS3s would take a while. And Mac Pros aren't really cost efficient.
Unless they are making a Mac version of the game, generally all the artists, designers, engineers, and modelers would have to use PCs.
But people like, writers, PR, legal, management, accounting, pretty much anyone not actually pushing content into the game (writers being an exception, it's just that their work doesn't turn into bytes for the game and Mary) can use a Mac. None of their work (exception of writers) really gets seen in the game.
