If you actually enjoy the games that you claim you enjoy, then you'd play them more than the games you claim you don't. Therefore you wouldn't really miss anything because you would still be experiencing it. I don't miss a single thing from any of the past Halos because when I'm in the mood to play one, I play it. I'm not a mindless drone that believes the only available game to play is the newest one and I'm held by contract to play it.
Halo 3 is still running fine on Xbox Live and still has a good (Well, good is objective...)community around it.
Halo 2 doesn't have Xbox Live running anymore, but you have three alternatives for online play. You have Xbox Connect, Xlink Kai, or Halo 2 Vista. None of them having ranking systems or matchmaking. If you don't like what people are playing on their servers, make your own.
Halo: Combat Evolved never had Xbox Live to begin with, but it still has alternatives. You can sometimes get a match on Xbox Connect, but the real Halo: Combat Evolved online experience is with Halo PC. Even has Custom Edition where you can download custom maps to play with other people. If you don't like using the mouse and keyboard, just get a wired Xbox 360 controller. Be warned, there's no auto-aim and you'll have to lead to make up for lag. If you're up for a challenging game with a great skill-gap, you'll be fine with that, though.
