My favorite map in Halo: CE that has received no attention in either H2 or the discussions on H3 was Chill Out. Couple ports, couple different levels, some windows to jump in and out of, couple power ups, rockets, snipes, and grenades made this map an explosive asset in the CE archive. Revamping it for H3 is the best idea in this thread.
Blood Gulch/Coagulation coming back may be Bungie overplaying its hand. But if the new map includes storied differances... [imagine wreckage all over the map, downed scarabs, fusion cores, pieces of the borken halo overhead] it could be a whole new map. What I think might be better than revamping this for a BG trilogy would be to start from scratch with a new map with two opposing bases. Make it completely different, in a completely new setting. Perhaps the Rockies, or a rainforest outpost on Earth.
Hang Em High was the map from Halo CE that was most called for to be ported to H2. I would think Bungie would be missing something important not to include some kind of remake in H3.
Damnation was a great map. But the absence of fall damage in H2 really limits the essence of Damnation. To include it in H3, Bungie would have to reamke it with some new, dramatically innovative ideas so as to provide what the fall damage left missing. If Damnation exisited how it did in Halo CE in H2, there wouldnt be much point. Those in the top base would surely win due to the ability to fall straight to the bottom without any reprocussions. Now if the map was filler with holes and cracks that fell to bottomless pits, that would be another story. Or, maybe if you fell to the bottom, you would have to make a very hazardous journey back up to the top with grenades/bullets/rockets raining down upon you.
This is wild speculation and should be regarded as the fantasy of a raving halo-unatic, but its great fun to think about.
