As far as the "pause" idea goes, it would be appropriate for, say, custom games. However, to implement that into Xbox live would be bad call... for one thing, skilled players (or even unskilled players, for that matter) could easily pause their game, a split second before they died, and could save themselves. Your "two-minute time frame" makes sense, to a degree. However, if the game were timed (which all games on Xbox Live are), then an individual person or team could gain the lead, pause when there's only two minutes remaining, and the opposing team would have no way of regaining a close game, thus obliterating some of the more tense moments in a Halo match.
Infinite grenades is an option in both Halo: CE and Halo 2 for the xbox, if I recall, and I would definitely expect Bungie to include it in Halo 3. The customizable map option as always intrigued me, as I have never played Halo on the PC... so I think if Bungie can pull it off, then they should definitely include it in the 360 version.
