We haven't really seen any blueprints or a miniature model made by Bungie.

What size do you think it must be to hold all of Bungie's enemies and how far back the spring must be pulled?

Well it depends on how many enemies Bungie has in the first place. I would think that they wouldn't have too many, but I can't really say that in total confidence. My guess would be that the sling shot would have to be at least as big as a house and that it would have to be pulled back millions, if not billions of feet in order to sling someone to the sun.

I'm going to speculate straight away - somewhere in the world of Bungie's next game, there will be a giant slingshot that fires you into a nearby star.

Oh, as for the real giant slingshot, why the hell do you think Marcus Lehto rejoined Bungie? To make games? Don't be ridiculous.
