So I managed to get it working...for the most part (minus the blastacular map pack).
Here are my steps:
1) I copied my original xbox data (including maps) back to the original HDD (contents from 4/10/2010).
2) I then did a complete wipe of everything Halo 2 on my 360 minus my profile.
3) Did a transfer from my old HDD to the 360.
4) I then put in the map pack disc.
5) Updated Halo 2 to 1.1 (which I had 1.5 when it was on my old system).
6) Installed the map packs (I found it odd that even though the maps were back on the 360 from the transfer, the map disc didn't recognize them as being there).
7) After I did this, I fired up Halo 2 and got the corrupted data error (because of the blastacular map pack not recognized by 1.1). Bypassed the error and was able to see 21 maps now in the selection screen under custom games.
8) I then went in and deleted the blastacular map pack to get rid of the error about corrupted content.
At this point, unless there is a way to apply the 1.5 update, I am going to just leave it as is.
I don't understand why from the beginning transferring all my data directly didn't bring the 1.5 update over with it.
