I like them because every boss is relevant to the storyline. It's not like in other games where you fight a boss that looks cool, but they really do not matter to the overall plot. In Halo, it's cool because you keep seeing and hearing about the boss's throughout the game, and then you finally get to take them down.
Would you rather just watch a cinematic of Master Chief killing a prophet, or would you rather climb up on top of him yourself and beat him to death?
Another part of it is Halo 1 did not have any major antagonists. The only real bad character was 343 Guilty Spark, and you couldn't fight him. When they intorduced other characters into the Halo Universe it became important to the story line that You kill them.
Also, the fights are pretty cool. Taking down the Scarab was cool and fun, and so was fighting Regret. Tarturas was alright, it could have been much cooler for a final battle, but it got the job done.
So, yeah. I like the fights and want to keep them, because I want to fight Gravemind, Truth, And even Cortana (because we all know that she is now rampant, and we are going to have to take her down.)
