Personally I found the boss battles weren't really like boss battles you would find in a platformer. Bosses don't have increased health or anything (apart from tartarus's shield)
A rare kind of intelligence from Waypoint proves your claim wrong.

H2 boss battles were easy (unless you limited yourself to melee and grenades). It's just the high damage and the constant reinforcements that made them difficult on higher difficulties.

and I felt the battles were realistic and were actually what would've happened in the story.
Realistic? Not a chance.

Would have happened in the story. Perhaps. I liked the degree of customization. Fighting Tartarus with vehicles, armies of Elites, Johnson clones. Playing hide and seek with the Heretic leader (sword cancel off of him to fly to the other side, cloak, and hide under the ramp. This is way better than swording like crazy and getting pwnd in seconds and it works with all skulls on).

For example sesa refumee has the same health and shields as a normal heretic elite,
Are you blind? He has like 5x the health of an Heretic Elite. It's merely disguised by teleporting. It's just like Reach skirmishers. They take a heck lot of body shots but they stumble every time to hide the fact that they're damage sponges.

Tartarus would have those shields because he is the chieftain of the brutes,
Understandable.

and regret is a prophet so he understandably has an over shield, but he is easy to kill
Prophets don't use overshields. They only Covie technology they use in combat besides their thrones is the plasma pistol (and this is depicted in the boss fight if you get him out of his throne with dual needlers).

In fact, it would be more believable if there were Engineers protecting Regret. Then we wouldn't have to board him to kill him. Just shoot the Engineers leaving Regret open instead of taking chances with boarding (it's stupid how you immediately get shot at once you get off of him. On SLASO, it's ridiculous fighting Regret unless you combine your melees with grenades and run like hell). I always wanted to rocket the bastard.

Sesa rufemee has increased health? Never noticed. I always just had to lower his shields with the plasma rifle and then melee a couple times.

Also regret does have shields doesn't he? He has to, a prophet would die from one punch without them

You don't play on Legendary, do you?

As for the shields, there's no mention of them in the books. Furthermore, how would the shields protect the Prophet if Chief is inside the shield?! Notice the blood coming out when you melee him (iirc, there is)? Yeah, that means he's hitting Regret. Even if the shield is somehow still protecting him, it does not cushion the blow or Regret would not have died when Chief boarded him.

Also, when Zhar attempted to attack Truth, they were in their gravity thrones:
An honor guard of five Sangheili guards arrayed themselves
around their floating chairs

So why would he attack them if they were shielded? I call the prophet battle in H2 bs since there's no mention of gravity thrones having shields in the books.

Anyways, it's plainly evident that Regret is a damage sponge. Also Tartarus. The constant shield regeneration (sometime after it's taken down by a beam rifle) is a distraction to hide it.

I dont know the tricks for Legendary ;)

And I think it is stupid that it takes so much hits to kill Regret when he doesn't even have shields. A grunt is more durable than a frail weak prophet. If they wanted to make the Regret battle more believable, they should have had loads of honours guards (not infinitely spawning, thats stupid) and once you kill them all, you get a clear one shot kill at regret with whatever weapon you are holding. Or maybe two shots.

I didn't say anything about tricks. ;)

Though I did do 2 of the boss fights with all skulls on (not like MisterMonopoli though. I'm not that skilled).

For the Heretic Leader, I'm unable to long distance sword cancel (like those speedrunners) off of him and 90% of the time, if you try to sword him or run to a hiding spot, you're going to get shot down by his hologram buddies. There is one hiding spot that can work but you won't have much time to attack the leader before getting shot down. I found that the best way is to sword cancel off of him and hide under a ramp. That is when I noticed the Heretic leader had boss type #1 traits. I cloaked, stuck out, killed the holograms then I got on the Seraph, lowered the Heretic boss's shield, and shot his head with a Carbine repeatedly until he teleported.

For Regret, I blocked his minions using scenery making it much more easier to get to him. The only hard part was avoiding the Grunts. Then I returned to my blockade where I used sword Elites for overshields. Or I noob comboed them if I didn't have Black Eye on. Then I just cloaked, made my way to Regret, easy battle.

For Tartarus, you don't have to use a vehicle to know what he is. Get yourself an army of beam rifle wielders and let them hit Tartarus. He won't die so easily...

Glad you see it better now.

The infinitely spawning enemies should be replaced with set spawns. And there should be at least 1 infinitely spawning Engineer providing Regret with a shield so it isn't necessary to kill all the infantry (because that would be a pain).

The honor guard Elites should be distinct and tougher from other Elites, because they're basically reskinned Elite majors. Remember the CE Spec Ops Elites? Yeah, that's what they should have been. Better shields, player-equal, take cover when shield is damaged 1/3. Or even better: CE Goldies. They fired their rifles so fast they frequently overheated and they could leap!
