An i7 2600k would give you your best bang-to-buck ratio, although it lacks the 40-lane PCI support that an Ivy (3770k) would have. I'd go with the Ivy if you have the money.
For the GPU, AMD handles multi-monitors better. A 7970 would be perfect, again, if you have the money. Why not a 3770k? I'm sure there's gonna be some good sales going on right now for those. And if you can afford it, get a 7970 for multimonitor support, or a 670. If that's too much, then definitely a 7950. Also, I didn't know you could SLI two different GPUs?Yeah, you can. They can't work in tandem like regular SLI, but you can assign one card to run nVidia-specific AA settings or PhysX.
