Some people give Humanity too little credit.
The battle of Sol was largely in humanity's favor, with knowledge of the system, and the slightly understrength 300 ODP's, as well as a Fleet that easily numbered in the thousands ( For example, ONI seemed to have lied about the number of heavy cruisers the UNSC had remaining to throw off the Covenant, as during the battle far more than just 20 Cruisers are shown ). Not to mention the ODP's could fire and reload every five seconds. It is also portrayed in Halo Reach that they can now fire into the atmosphere as well, against targets that bypassed them in orbit.
Of course, I still don't agree that's possible, as an ODP has the energy to end life on a planet, but only 30 ships seemed to have bypassed the ODP's and followed Truth through the portal, the rest of the Covenant fleet seemed to have been wiped out in space. Most likely the greatest Naval victory in UNSC history to date, but that's just my opinion.
As for the remaining human population, I typically side with the argument that Humanity remained in the billions, around 16 by using Halsey's figure in 2511, probably slightly more. Humanity had over 800 colonized worlds under its control, even had Earth fallen, I do not think the Covenant would have even succeeded in the long run with the UNSC having surpassed the Covenant in technology ( The NOVA bomb's, The template for the Infinity, many worlds possessing more Forerunner tech, tech that Humanity actually could understand and learn, unlike the Covenant who simply imitated it ). Of course, I suppose that depends on who may have been killed or what would have been lost if Earth had fallen.
Point in case, Sol was the military end for the Covenant ( Or the Covenant we knew then O.o ), Humanity kicked ass, and now will seem to continue to kick ass, 200+ million or 16+ billion strong.
