CE-H2 era Chief: this was when Chief was actually seen doing something unlike in H3.
In particular, playing as Chief in CE is far more immersive than in any other available Halo game. That's when:
1. The game wasn't just about Chief. On the game box art, you can see the marines, Banshees, Warthog, Halo. Not just Chief in a heroic pose taking up 2/3 of the box art.
2. The game was as expected. H2 turned out differently.
3. The game wasn't an overrated epic like H3. Handled immersion 20x better, levels were long and had replay value, and there are still new things being discovered/done years after it's release (i.e. T2T).
H2 is a worthy successor (but not necessarily as much as H4, which looks even more worthy to me, at least when comparing campaigns). H3 is not.
Arbiter: He gives you one look of justified anger, you know you're dead. The one thing in H3 I will never forget. Playing as him in H2 was the bomb.
Johnson: Enough said.
Honorable mentions: Kurt, Capt. Keyes, Stacker, Dubbo, most marines in CE, ODSTs from H3: ODST, overdramatic trooper on New Alexandria, Jorge
