This matter would combine into infinite stars, among other objects, and would make the night sky a solid shade of red/yellow/orange.
But it isn't like that, so I think the universe isn't infinite.

The existence of the observable universe invalidates Olbers' Paradox.

An infinite space does not necessarily have infinite things in it

I don't think you understand the concept of infinity. In a truly infinite universe, infinite space means infinite events.

The OP's idea is wrong, but not because the universe is finite. It most probably isn't. Its expansion is also increasing, not that that matters as far as an infinite universe is concerned.

Olbers' paradox assumes that because the universe is infinite, then the night sky must be completely covered in stars. It doesn't account for the existence of the observable universe.

it would remain a featureless red cube forever if it is inert and there is nothing else is in the universe to change it from its current state.

Maybe, but not everything else. Just because something is infinite does not mean it encompasses "everything". The set of all even integers is infinitely large, yet it doesn't come anywhere close to containing every number (infinitely too small, actually).

That's not how it works

An infinite universe does not have to contain infinite things simply because it could. I just disproved that by showing that it was perfectly logical to have an infinite space with only a single object contained in it.

But how could we possibly know that only a single object is contained within an infinite space?
