Not bad, Matt. I had begun to think I was the only one who'd noticed this. I give you 93% credit for knowing where to *encounter* the forever-spawning Covies.
I subtracted 5% for not knowing (or at least not saying) exactly where they _spawn_, and another 2% for not specifying the _corridors between the gravity lift bay and the next checkpoint_. When you say "The corridors", that would be most of the ship.
ORIENTATION: If you eliminate all hostiles in the Grav-Lift Bay, there will be two doors on the same wall that allow you to exit and proceed to the next checkpoint. I'll call those the Exit Doors.
Both Exit Doors lead to short corridors that both connect to a longer corridor at which you must turn right to go to the next checkpoint. I'll call that longer corridor the Spawn Corridor because it contains both the spawn point and the trippoint that triggers the spawning.
A left turn into that corridor will bring to a set of sliding doors at the left end that won't (normally) open for you. Beyond those doors is a very short section, about airlock-size, that ends in another set of doors that never open. (End of the map.)
The grunts and jackals spawn in this short section. Their spawning is triggered at the demarcation line at the right end of the corridor, just before it turns left to go to the next checkpoint. They do not begin spawning until you reach that line, and no new Covies will spawn if you return to the Grav Bay side of the demarcation line.
(1) Recommended procedure if you want to enter the Spawn section in Solo (Single Player):
Take the right door exiting from the Grav-Bay. Entering either short corridor triggers one or two grunts (depending on Difficulty) at the right end of the Spawn Corridor. Eliminate it/them before cossing the demarcation line, then cross it which will trigger Covies spawning at the aforementioned Spawn Section and up the corridor toward the next checkpoint, catching you in a sandwich if you continue left around the corner and up toward the next checkpoint.
Take out all these fresh-spawned Covies however you prefer, but at the end place yourself on the downhill (GravBay) side of the demarcation line and make sure you eliminate any grunts/jackal you may have spawned while on the uphill (next checkpoint) side.
Once the corridor's clear, cross the demarcation line and then run like h*ll down the corridor to the Spawn Section. You should be able to reach the doors as the new arrivals open it for you. Once you've eliminated them/it (Two grunts or one jackal), you have access to that section.
(Incidentally, this is why I said those doors *normally* won't open for you. Here's the exception: Once they're opened by Covies, your proximity will keep them open and if you're just out of opening range and they start to close, you can make them open by moving within range before they fully close.)
(2)Recommended procedure for seeing the Covies spawn in the Spawn Section while playing Solo:
Can't be done. Sorry!
(3)Recommended procedure for seeing the Covies spawn in the Spawn Section while playing Co-op.
Clear corridors as in Procedure (1). Then leave Player 1 at the Spawn Section doors while player 2 crosses the demarcation line uphill.
When the Covie(s) emerge, kill, and enter Spawn Section.
Leave Player 2 uphill beyond demarcation line and Covies continue to spawn appproximately every half minute.
They'll be very surprised to find you waiting!
You can amass Buku grenades on one spot with this trick. Time your own grenade right and you can fire the accumulated bodies up the corridor like a cannon.

Here's a simple one: On the level T&R, where's the one place where Covies continue to spawn indefinitely until you trip the next checkpoint?
Here's a hint: Only grunts and jackals spawn, and if you're careful to shoot the grunts before they throw anything you can load a small space with tons of plasma grenades for an enormous bang before you leave. The size of the explosion is limited only to your patience in accumulating the grenades (which will mostly be hidden under the fallen grunt and jackal bodies).
Where is it?
Either the gravity lift bay, or the corridors.
