Honestly, they could accomplish some serious direction/explanation for the player solely by changing their UI. The menus always seem incredibly cluttered with information. If they developed a more Skyrim esque approach to displaying the information on screen with better information display, I think the game would drastically improve. Not that Skyrim's is perfect, but I always feel like I understand everything being displayed to me better instead of having to click a bunch of buttons just to see the definition for an item.
The menu navigation definitely takes a while to learn. I think the game could also benefit from a deeper explanation of stats and exactly how they affect gameplay. As a longtime fan of fantasy tabletop games like D&D, I'm pretty familiar with them, but I can't help but feel as if it's intimidating to newcomers to role-playing. Streamlining the menu systems while providing more information about the items or what-have-you being displayed would be nice.
What I really, REALLY hope doesn't happen is the world losing the incredible mystery and sense of scale. Several moments from both Demon's Souls and Dark Souls are some of my favorites from any game: Exploring the Boletarian Castle in Demon's Souls, the first sweeping view of Anor Londo from Dark Souls, and the moment when you really begin to appreciate just how big the game world really is.
I think the open world from Dark Souls was a huge improvement, and the exploration was a joy. I'd hate to see that get replaced by linear gameplay. One could argue that Demon's Souls was linear, but the excellent level design more than made up for it.
